The restaurant is scheduled to open in April 2024 as a collaboration between Chef Kobayashi Kei of the Parisian French restaurant Restaurant KEI and Toraya, a Japanese confectionery shop founded in the late Muromachi period.
In Ginza, Tokyo, where tradition and innovation coexist and diverse food cultures can be enjoyed, we want to create a restaurant that goes beyond the realm of French cuisine, pursues innovation in gastronomy with unrestrained, free-thinking ideas. We want everyone working here, not just the chefs, to learn and research ingredients and share the essence of gastronomy with customers who visit, so that not only the food but the entire experience here will satisfy customers. ESPRIT C. KEI GINZA is a so-called "gourmet laboratory" that embodies Chef Kobayashi Kei's thoughts.
The restaurant consists of a main dining area with counter seating that gives a lively feel centered around the open kitchen, which is the center of food production, table seating covered with wooden concept design, and a private kitchen with individual rooms modeled after a laboratory.
It is said that France has a culture of stone, and Japan has a culture of wood. This restaurant is a new space where the cultures of both countries meet, where stone and wood come together in harmony. The ceiling concept design that covers the entire floor is a dynamic composition that changes from a traditional checkerboard pattern to an innovative cave-like installation, expressing tradition and innovation.

While implementing functional zoning and planning, the main dining area features a unique and bold wooden ceiling concept design.
Even though the space is limited, the private rooms have a sophisticated design thanks to the skeleton concept design on the ceiling.
The open kitchen was designed with careful attention to detail, together with the chef, and custom-made counter chairs were created to reflect the chef's preferences.
