overview

This is a new style bar created by chef Kei Kobayashi and Saint-Louis, a French crystal maison founded in 1586. You can enjoy the dishes and desserts created by the chef along with drinks served in traditional Saint-Louis crystal glasses.
The new bar style, with two rows of seats, was created by the service staff and chefs, and the custom-made counter, made of Datekanmuri stone, stands out like a stage alongside the cooking scenes.
A terrace seating area is planned at the rear of the bar, and an elevated garden is arranged based on a Japanese garden, creating a three-dimensional concept design together with the stairs to the roof.
In order to express the traditions and history of "Saint-Louis" and "Toraya," two long-established brands representing Japan and France, in the space, we have focused on using genuine materials.
The top of the first row counter is made of Jindai cedar, a wood that is said to have fossilized and remained underground for over 2000 years, while the second row counter is made of Datekan stone, which was also created by crustal movements over a long period of time.
The cultures of France and Japan come together in a space where stone and wood harmonize, and the sparkle of Saint-Louis crystal scattered throughout adds a touch of French flair.

Issues/requests

・A unique concept design
・We will have a pastry chef on hand to serve alcohol and desserts even late at night, and we will operate only for dinner, so while the main focus will be on the bar, it will also be a space where you can enjoy a meal.
- In addition to a reception area and two restrooms for customers, there will also be an office, locker room and storeroom.
・Two restrooms will be provided for customers.

There were more requests than this.

solution

The restaurant has two counters, one for service and one for cooking.
A concept design staircase leads to the rooftop, and full-opening sashes are used to strengthen the connection with the garden.
Furthermore, we have used rare domestic materials that have stood the test of time, expressing the ingenuity of combining Japanese materials and structures with the Saint-Louis crystal.
