This is a new style of bar created by Chef Kei Kobayashi in collaboration with Saint-Louis, a French crystal house founded in 1586. You can enjoy the chef's creations, including dishes and desserts, along with drinks served in Saint-Louis crystal glasses, which are steeped in tradition.
In this new bar style with a two-row layout created by the service staff and chefs, the custom-made counter constructed from Datekanmuri stone floats like a stage alongside the cooking process.
A terrace seating area is planned at the back of the bar, incorporating a raised garden based on a Japanese garden design, and a staircase leading to the rooftop, creating a three-dimensional concept design.
In expressing the traditions and history of "Saint-Louis" and "Toraya," two long-established brands representing Japan and France, we have focused on using authentic materials to create this space.
The countertop of the first row is made of ancient cedar, said to be wood that has slept underground for over 2000 years and fossilized, while the countertop of the second row is made of Datekan stone, which was also created by crustal movements over a long period of time.
Where French and Japanese cultures meet, stone and wood harmonize in this space, and the sparkle of Saint-Louis crystals scattered throughout adds a touch of French spirit.

Issues/requests

- It has a unique concept design.
- We will have a pastry chef on staff and operate only for dinner, allowing customers to enjoy alcohol and desserts even late at night. The bar will be the main focus, but the space will also be a place where customers can enjoy meals.
- In addition to a reception area and two restrooms for guests, the facility will include an office, locker room, and storage room.
- Two restrooms will be provided for customers.

The above requests were received.

solution

We've created a two-row counter configuration, separating the service area from the cooking area.
The rooftop is connected by a sculpturally concept design staircase, and full-opening windows were adopted to create a strong connection with the garden.
Furthermore, by incorporating rare, domestically produced materials that have stood the test of time, we have expressed the exquisite combination of Japanese materials and construction with the crystal of "Saint-Louis."
