This restaurant opened in April 2024 as a collaboration between Chef Kei Kobayashi of the French restaurant "Restaurant KEI" in Paris and Toraya, a Japanese confectionery shop founded in the late Muromachi period.
In Tokyo's Ginza district, where tradition and modernity coexist and diverse food cultures can be enjoyed, we want to create a restaurant that transcends the boundaries of French cuisine, pursuing innovation in gastronomy with a free and unconstrained approach. Not only the chefs, but everyone who works here learns and researches ingredients, sharing the essence of gastronomy with our customers, and ensuring that not only the food, but the entire experience here satisfies the hearts of our customers. "ESPRIT C. KEI GINZA" is, in a sense, a "laboratory for gastronomy," embodying Chef Kei Kobayashi's vision.
The restaurant consists of a main dining area with a lively counter seating area centered around an open kitchen, the heart of the culinary creation process, and table seating covered in wood concept design, as well as a private room with a private kitchen designed to resemble a research laboratory.
France is said to have a culture of stone, and Japan a culture of wood. This restaurant blends the cultures of both countries, creating a new space where French and Japanese cultures meet in harmony, with stone and wood. The ceiling concept design, which spans the entire floor, expresses tradition and innovation with a dynamic composition that changes from a traditional checkered pattern to an innovative cave-like installation.

- It has a unique concept design.
- As a grill bar where you can also enjoy French cuisine, create a sense of luxury that takes into account the average customer spending.
- The seating area will consist of counter seats, table seats, and private rooms, with multiple ways to move between floors.
To create an immersive dining experience as if you were dining in the kitchen, a charcoal grill is installed inside the counter, along with a storage area where aged meats and wines are displayed.

While implementing functional zoning and planning, the main dining area features a unique and bold wooden ceiling concept design.
Even in a limited space, the private rooms are enhanced by a skeleton concept design on the ceiling, creating a more aesthetically pleasing space.
The open kitchen was designed with meticulous attention to detail, including the dimensions, in collaboration with the chef, and custom-made counter chairs were created to reflect the chef's specific preferences.
